This is just so simple and such a lovely combination of fresh flavours. In hot weather, like we having now, we all just want fresh, quick, light food - but we want it to be delicious too with lots of flavour! That's where we come in with our Fresh Herb Sea Salt seasonings and in this recipe I have used our very popular at this time of year - Dill Lemon & Garlic Fresh Herb Salt SERVES 2 Mains INGREDIENTS 1 Pack of De Cecco Gnocchi di Patate Homemade Pesto 1/2 tsp of Dill, Lemon & Garlic Fresh Herb Salt Olive Oil & Parmesan Method Step 1 For the Pesto - Put 2 big handfuls of fresh basil into a blender. Add 2 Tbs of Pine Nuts 50g of grated Parmesan 75 - 100ml of good Olive oil (if when blended it seems dry add more oil) Blend it all up until you have a paste Step 2 Bring salted water to the boil and add the Gnocchi - when it floats to the top it is done - usually around 2 mins. Drain and add a little olive oil to coat. Step 3 Add the Pesto to the gnocchi and turn over gently. Any left over pesto can be put into a small container and cover over with oil. It will keep for ages or otherwise put it into the freezer. Serve with a crispy salad of lettuce, rocket, feta, tomatoes, pink lady apples, cucumber with an Olive Oil and Balsamic Vinegar Dressing.
