This is just so, so simple and such a lovely combination of fresh flavours.
In hot weather, like we having now, we all just want fresh, quick, light food - but we want it to be delicious too with lots of flavour! That's where we come in with our Fresh Herb Sea Salt seasonings and in this recipe I have used our very popular at this time of year - Dill, lemon and garlic.
Ingredients for 4 people:
Half side of salmon or 4 fillets
Tub of Creme Fraiche
Unsalted butter
Spread a little butter on the top side of the salmon and rub in some Dill & Lemon Fresh Herb Salt - approximate a heaped teaspoon - wrap in foil and bake in the oven at 180C /160C Fan / gas 4 for about 15 minutes.
Put 4 tbs of the Creme Fraiche into a pretty bowl with approximately 1/2 tsp Dill & Lemon herb salt (add to taste) and stir in and leave to stand to dissolve the salt and merge flavours.
Serve with new minted potatoes and asparagus and peas - really fresh, delicious and cooling!
